  • ¼ cup brown sugar (55 g)
  • ¼ cup orange juice (60 mL)
  • ¼ cup white distilled vinegar (60 mL)
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 1 teaspoon sesame oil

Procedures

  1. Cut the chicken into 1-inch cubes and set it aside.
  2. Combine salt, white pepper, cornstarch, and flour into a bowl, and whisk them together.
  3. Add the egg, water, and oil, and mix until it looks like pancake batter.
  4. Toss the chicken in the batter and coat liberally. Refrigerate for at least 30 minutes.
  5. In a wok, heat oil to 350˚F (180˚C). Gently add the chicken and cook for 5 to 6 minutes or until lightly golden brown.
  6. Remove the chicken from the pan and transfer it onto a paper towel-lined plate. Mop up the excess oil.
  7. In a different pot, set the heat over medium-high. Add oil.
  8. Add the red pepper flakes, ginger, and garlic, and cook for 30 seconds. Keep stirring. Then, add the sugar and brown sugar, and stir to combine.
  9. Pour in the orange juice and let the sugars dissolve, stirring occasionally.
  10. Add in the vinegar and soy sauce, and stir to combine. Next, add the cornstarch and water together, and whisk to combine.
  11. Continue to cook the sauce until the consistency is syrupy.
  12. Add the sauce in the wok. Toss in the fried chicken and stir until completely coated in the sauce.
