On its own, Elote is a zesty and flavorful Mexican street food dish made up of grilled corn, lime, cheese, chili, and creamy mayo. Pair that together with a meaty corndog, and you’ve got a little corn-ception going on. Corny? Yes, and no.

Here’s what you’ll need:

Start by making the garlic crema:

  • Mix the mayonnaise, sour cream or yogurt, minced garlic, and lime juice in a bowl.
  • Season with salt and pepper, then set aside.

To make the corndog batter:

  •  Mix the dry ingredients – pancake mix, cornmeal, and chili powder – in a bowl.
  • In another bowl, whisk your eggs and milk (or water) together.
  • Gradually pour the wet ingredients in with the dry ones, mixing them together until they’re well-combined.
  • Store it in the fridge.

Time to cook:

  • In a deep pot, heat up some oil deep enough to submerge the hotdogs to around 180C.
  • Skewer each hotdog on a BBQ stick and lightly dredge it in flour.
  • Shake off the excess.
  • Dip each hotdog in the batter and deep fry until golden brown.

Time to assemble:

  • Lay the corndogs flat on a plate.
  • Drizzle the garlic crema mixture over it and crumble some white cheese on top.
  • Finish off by sprinkling some jalapeno, cilantro, and chili powder evenly onto it. Enjoy!

Taking inspiration from the well-loved Filipino breakfast, this hearty bowl comes with garlic rice, a sunny-side-up egg, and a juicy steak cooked your way. Here’s what you’ll need:

To cook the steak:

  • Thinly coat your skillet or saute pan with some oil and set the heat to high.
  • Meanwhile, season the steak with salt and pepper.
  • Once the oil is hot enough, carefully place your steak on the pan and let each side sear for about 1 to 2 minutes. That way, you’ll have medium-rare steaks (works if the meat is 1/2 inch thick). Cook longer if you prefer it more well-done.
  • When done, set aside the steak on a chopping board and let it rest.

Work on your rice:

  • Add butter and mix well.
  • Season with more soy sauce if needed.
  • Transfer to a serving bowl.

For the egg:

  • Just cook it sunny-side up on a non-stick pan.
  • Season with salt and pepper.

To assemble:

  • Cut the steak into 1/2 inch cubes.
  • Place the cubes on top of your bed of rice and carefully slide the egg on the side. Make sure not to break the yolk.
  • Finish it off by garnishing it with togarashi and sliced onions. You’re done!

Start with the Garlic Cream Cheese spread:

  • Combine your chopped garlic, cream cheese, and cream.
  • Season with salt and pepper to taste, then set aside.

For the rice:

  • Cook the rice in a rice cooker as you normally would. =
  • Once cooked, transfer it to a bowl and season with sushi vinegar to taste. Start with 1 tsp increments, work your way up, and mix well. The rice should have a mild vinegar taste. Make sure to do this while the rice is hot.
  • Set aside and let it cool to room temperature.

For the Spam:

  • Coat the Spam in white sugar and cook it on a non-stick frying pan with a little oil over low heat.
  • Flip once caramelized and do the same on the other side.

To assemble:

  • Get a handful of sushi rice and pack it into a rectangular shape, much like the Spam.
  • Spread a bit of the Garlic Cream Cheese on top, then place the Spam over it. Wrap this with cling film to keep its shape intact.
  • When it’s ready to eat, remove it from the plastic, wrap the whole thing in nori seaweed, and enjoy. You can even garnish your Musubi with sesame seeds, sliced green onions, chili powder, or bonito flakes if you have any at home. You can also dip it in soy sauce, teriyaki sauce or chili oil, depending on your personal preference.
