There is one particular Japanese dish that has been frequenting millennials’ Instagram stories nowadays. If it weren’t for the Boomerang feature, the okonomiyaki might appear to be an unsuspecting omelet. However, you know what they say: there’s always a wild side to an innocent face. What makes the okonomiyaki a bit of #foodporn is the way it dances. This is because of the fish flakes garnished on top – so thin that the steam exuding from the heat of the dish allows it to move.

In the Philippines, authentic Japanese food is often attached to sophistication and cost. Little do we know that some of their specialties come from humble beginnings and the okonomiyaki is one such dish. A mix of essentially any available ingredient, this flour-based recipe nourished the Japanese in their time of need after the food shortage brought by the concluded war in 1946. Founder Eikichi Noshino takes pride in this Osaka-born specialty that not only brought nourishing food to the tables of his fellow Japanese, but which has now also become a staple in Japanese cuisine.
